Abstract

One of the significant complications affecting morbidity and mortality in infants and children is heart hypertension. Bananas (Musa paradisiaca) and oranges (Citrus sinensis) are local food crops rich in potassium and antioxidants, making them suitable for use as functional beverages to support blood pressure reduction. The purpose of this practicum is to develop a powdered beverage formulation that is easy to consume and has the potential to be an antihypertensive supplement for pregnant women at the Jamu Health Tourism (WKJ) in Tegal. Fruit processing, sugar addition, drying, and organoleptic testing are all included in the production process. The observation results show that the powdered drink has a natural brown-yellow color, a characteristic banana aroma, an acceptable taste, and a fairly good powdered texture. Still within the safe daily sugar consumption limit, the sugar content is approximately 1.11 grams per 2 grams of powder. This formulation is stable and has the potential to lower mild hypertension due to the combination of potassium content from bananas and oranges, as well as the presence of citric acid which prevents browning. Thus, banana-orange powder drink can be a functional alternative product that supports herbal education and treatment at the Tegal City Women's Health Center.
