Abstract
Background: Food and beverages made by cottage industries are often contaminated by microorganisms because they still use manual techniques, the production time is quite long in the production process, product storage, product distribution and finally reaches the hands of consumers. The presence of microorganisms in food/drink is highly undesirable because it can cause organoleptic changes in the food/beverage, especially if the food enters the body. The nutritional content of soy milk is also almost the same as cow's milk. Soybean milk comes from nature so it has a cheaper price than cow's milk and has many health benefits that make it much preferred by the general public. Purpose: To determine the quality, safety of Soybean milk quality and the presence or absence of bacterial microbial contamination of Soybean milk sold in Gombong District, Kebumen Regency. Method: This research is a descriptive non-experimental study using the ALT (Angka Lempeng Total) method on PCA (Plate Count Agar) media. Result: The results of the study of 10 samples of soy milk found that the ALT value of Soybean milk sold by the seller was C 3 x 104, D 4.9 x 104, F 7 x 103, H 4 x 103, I 2.7 x 103, J 3 x 103, eligible because the number of colonies <104 and Soybean milk samples sold by the seller A 2.0 x 105, B 2.5 x 105, E 2.8 x 104, G 2.3 x 105, did not qualify because the number of colonies > 104. The results of statistical tests showed that the data were not significantly different, which means that the number of colonies from each seller was not much different. Conclusion: The results obtained from each seller were not much different (P<0.05). Seller A is less hygienic than seller B, C, D, E, F, G, H, I and J. Recomendation: further research is needed using the method and identification can be made to determine other types of pathogenic bacteria.
