Abstract

Background: Free disease is one of the causes of degenerative diseases. Therefore, free radicals can be prevented with the use of antioxidants. Yutuk is one of the natural sources of the sea that contains chitosan as an antiochan. Antioxidant testing can use ABTS and DPPH methods. Research Objective: To determine the antioxidant activity of chitosan from mole crab shells using ABTS and DPPH methods. Research Method: Chitosan physical test is carried out by organoleptic test, water test and tube test and FTIR analysis test is carried out. Antioxidant activity tests were conducted using ABTS and DPPH methods. The resulting data is an IC value of50. Research Results: chitosan physical test results were carried out with brownish-white organoleptic tests, in the form of flakes or fine powder, water tests showed results of 1.4188% and ash content tests showed 3.4332%. The results of the FTIR analysis test from the mole crab shell were marked by the presence of amide and hydroxyl groups with a deacetylation degree value of 57.62%. The results of the chitosan antioxidant activity test from mole crab shells with the ABTS method IC50 value of 190.48 ppm and DPPH of 144.15 ppm. Conclusion: Chitosan with mole crab shell has weak antioxidant activity in ABTS method while chitosan with mole crab shell has antioxidant activity that is using DPPH method. The DPPH method produces IC values of 50 better than ABTS. Suggestion: Further research needs to be done on the deacetylation process in order to get perfect chitosan with a degree of deacetylation above 70% by taking into account the temperature, time and concentration of NaOH used and it is necessary to test antioxidant activity using other methods in order to get better results of chitosan antioxidant activity from mole crab shells.
