Abstract

Background, Jackfruit leaves contain flavonol compounds which have the potential as very strong natural antioxidants, thus necessitating the development of a cream preparation for easier use. Cream preparations require formula optimization to obtain a product that meets quality requirements and can utilize Design Expert. Objective, To determine the optimal formula for jackfruit leaf ethanol extract cream and to ascertain the antioxidant activity of the optimal jackfruit leaf (Artocarpus heterophyllus Lam.) ethanol extract cream formula produced by the Simplex Lattice Design (SLD) method. Methods, Phytochemical screening for flavonoids in jackfruit leaf ethanol extract was performed qualitatively and quantitatively. Formula optimization used the SLD method with variations in stearic acid and TEA regarding viscosity, spreadability, and adhesiveness responses. The determination of the optimal formula was done numerically and validated using a T-test. The antioxidant test of the jackfruit leaf ethanol extract cream preparation used the DPPH method. Results, The results showed that jackfruit leaf ethanol extract contains 146.16 mg QE/g of flavonoid compounds. Stearic acid 8% and TEA 3.9% constitute the optimal formula with a viscosity value of 12,936±1326.831, an adhesiveness of 5.32±0.643374, and a spreadability of 7.79±0.207364, with a desirability value of 0.923. The T-test results showed no significant difference between prediction and testing (P>0.05). The antioxidant test of jackfruit leaf ethanol extract cream showed an IC50 value of 112 ppm, categorized as moderate. Conclusion, The jackfruit leaf ethanol extract cream preparation yielded an optimal formula and possesses antioxidant capabilities. Recommendation, It is necessary to purify the extract and include pH as a response in the cream formula optimization.
